With Valentine’s Day right around the corner, there are hearts everywhere. What better way to show your love to your sweetheart with a love letter in the form of a decorated cookie?
To make Love Letter Cookies you will need:
- Sugar cookie recipe
- Royal icing recipe
- House and heart shaped cookie cutters
- Royal icing heart transfers
- Light tan royal icing
- Darker tan royal icing
- Red royal icing
- White royal icing
- Wafer paper
- Food safe marker
Step 1: Since we didn’t have the exact love letter cookie cutter we had in mind for this project, we frankensteined one using a house and heart cookie cutter. First cut out a house shape and a heart shape out of your cookie dough. Then cut the heart in half using the house cutter. Place the heart piece next to the house on your cookie tray so the two pieces bake together in the oven.

Step 2: Outline and fill the top portion of the envelope using the darker tan icing. Place royal icing heart transfer on top. Let set for 5 minutes.

Step 3: Outline and fill the bottom portion of the envelope using the lighter tan icing. Allow icing to set 5 minutes
Note: Fill the large trapezoid in the middle first and let it set for 5 minutes before doing the side panels. This way you will see the different sections.

Step 4: Pipe criss-crossed lines on bottom of letter in red icing with a #1.5 tip. Immediately add white dashed lines on top with a #1.5 tip. Cut a piece of wafer paper in tag shape and write a note with edible marker. Place wafer paper tag on wet icing to adhere.

Step 5: Pipe string lines in red icing with a #1.5 tip. Immediately add white dashed lines on top with a #1.5 tip. Let icing dry overnight before sending to your sweetheart.
